One level tablespoon (15 mL) weighs very differently depending on the ingredient: water 15g, sugar 12.5g, flour 8g, butter 14g, honey 21g, salt 18g, cocoa 7g. This 3× range (7-21g) is why "tablespoons" are unreliable for precision baking. A tablespoon of flour can vary from 6-10g depending on whether it's sifted, scooped, or spooned. For recipes where accuracy matters (macarons, bread, pastry), always weigh in grams. One tablespoon = 3 teaspoons = 15 mL.
