This 3× range (7-21g) is why "tablespoons" are unreliable for precision baking. A tablespoon of flour can vary from 6-10g depending on whether it's sifted, scooped, or spooned. For recipes where accuracy matters (macarons, bread, pastry), always weigh in grams. One tablespoon = 3 teaspoons = 15 mL. A "heaping" tablespoon can be 20-50% more than a level one — always level off for consistency.
