Plan 3 tacos per adult and 1.5-2 per child. Use ¼ pound of raw ground meat per adult (it loses ~25% weight when cooked). One standard taco seasoning packet seasons 1 lb of meat. Buy 10% extra shells — some always break. Essential topping quantities per person: 2 oz shredded cheese, 1 oz sour cream, 3 oz salsa, plus shredded lettuce, diced tomato, and diced onion. Popular extras: guacamole (1 avocado per 3 people), cilantro, lime wedges, jalapeños, hot sauce, and refried beans. Offer both hard shells and soft tortillas for variety. Warm tortillas in a dry pan or wrapped in damp paper towels in the microwave (30 seconds). Set up the taco bar in assembly order: shells → meat → cheese → cold toppings → sauces.
